One of the great things about South Indian cuisine is that they use banana leaves as plates. The good side of this is a) it looks beautiful and b) this practice is about as environmentally friendly as it gets. At the end of the meal the waiter just rolls up the leaf and chucks it into a waste basket. No waste of water or energy by washing plates, no non biodegradable refuse.

Back home, we use the Banana leaves only for special occasions and most times, the leaves come from our own backyard.

And about sauces floating off, well there is a trick to it. Firstly, we normally eat on the floor and even if we eat on a table with a banana leaf, we make sure that the sauces are always in a "moat". Practise will make it perfect.

To answer RL's question, the leaves are procured mostly fresh every day. At the max they could be a day old. Because, any later, the leaves start to shrivel up and turn brown. And before you start, they let you make you sprinkle water on them, wipe it clean (of pollen dust etc.) and only then do they serve food.
